This article offers a literature review of quality assurance in relation to the dimensions of certification of general principles of food hygiene (PGH), certification of Hazard Analysis and Critical Control Points (HACCP), in addition to the certification of the quality management system (ISO 9001:2015) for the food sector. To determine competitiveness, the analysis is carried out in the following dimensions: productivity, technology, innovation, customer satisfaction, and public health. MSEs are the result of many years of work by entrepreneurs who, thanks to their effort and discipline, generate employment and are the future sources of employment for professionals.El aseguramiento de la calidad en las industrias alimentarias es un factor clave, capaz de reorientar a obtener certificaciones en alimentos de las Micro y Pequeñas Empresas (MYPE) con el objetivo de tener un mejor futuro, fundado en pilares de la competitividad para que la globalización de los mercados no las afecte. En este artículo se hace un análisis de la revisión literaria del aseguramiento de calidad en relación con las dimensiones de certificación de principios generales de higiene de alimentos (PGH), certificación de análisis de peligros y puntos críticos de control (HACCP), además de implementar la certificación de sistema de gestión de la calidad (ISO 9001:2015) para el caso del sector alimentario. Para determinar la competitividad se realiza el análisis en las dimensiones de productividad, tecnología, innovación, satisfacción del cliente y salud pública.
