Sumario:This paper presents an analysis of the experience and work of women who, as agents of change with respect to traditional gender roles, occupy different positions related to the local cuisine of Atenco. From the perspective of gender and the symbolic dimension of food, the significant role of women in the survival of a cuisine that has undergone changes and continuities over time is made visible. In order to account for this, the information obtained in the interviews carried out during the fieldwork was prioritised. We conclude that, thanks to women, a large part of the resistance to the hegemonic model of development and modernity is materialised in meals prepared and consumed in domestic units.
