The frequency of Salmonella in the main markets of Huánuco was 5% and the samples free of Salmonella was 95%. (P = 0.005). The samples contaminated with Salmonella in the main meat of Huánuco were of (6/120), that is to say 6 samples of the 120 samples analyzed were contaminated with salmonella and therefore they are considered unfit for its consumption. Similarly, Salmonella free samples were (114/120), ie 114 samples of the 120 samples analyzed were free of salmo- nella and therefore were considered suitable for consumption. With respect to the frequency of Staphylococcus, in 67 samples values lower than 120 colony forming units (CFU) were found, considering them unfit for consumption (55%) and in 53 samples values higher than 100 colony forming units were found (CFU), consequently, they are considered unfit for consumption. When establishing the relationship between the presence of salmonella and the hygienic conditions of meat vending in the three markets, of the 114 samples suitable for consumption, 41 samples correspond to meat sellers who do not have good hygiene conditions representing the 34.2%. With regard to the frequency of Staphylococcus, values greater than 100 colony-forming units (CFU) were found in 55% of the sam- ples. Consequently, they are considered unfit for human consumption.

Consequently, they are considered unfit for human consumption.La presente investigación se llevó a cabo en el departamento de Huánuco con el objetivo de Determinar la frecuen- cia y los factores de riesgo asociados a la contaminación por Salmonella y Staphylococcus aureus en las principales carnes que se comercializan en los mercados de Huánuco. Se recolecto 120 muestras de carnes que se comercializan en los principales mercados de Huánuco: M. modelo, M. antiguo y M. de Paucarbamba, el análisis de laboratorio de las muestras se realizó en el laboratorio de Microbiología de la Facultad de Medicina Veterinaria y Zootecnia de la UNHEVAL. La frecuencia de Salmonella en los principales mercados de Huánuco fue del 5% y las muestras libres de salmonella fueron del 95%. (P=0.005). Las muestras contaminadas con Salmonella en las principales carnes de Huánuco fueron de (6/120), es decir 6 muestras de las 120 muestras analizadas estaban contaminadas con sal- monella y por lo tanto se les considera no aptas para su consumo. De igual manera las muestras libres de Salmonella fueron (114/120), es decir 114 muestras de las 120 muestras analizadas estaban libres de salmonella y por lo tanto fueron consideradas aptas para su consumo. Con respecto a la frecuencia de Staphylococcus, en 67 muestras se encontró valores menores a 120 unidades formadoras de colonias (UFC) considerándolas no aptas para su consumo (55%) y en 53 muestras se encontró valores mayores a 120 unidades formadoras de colonias (UFC), en consiguiente se les considero no aptas para su consumo. Al establecer la relación entre la presencia de salmonella y las condicio- nes de higiene de las expendedoras de carne en los tres mercados, de las 114 muestras aptas para el consumo, 41 muestras corresponden a los expendedores de carne que no tienen buenas condiciones de higiene representando al 34.2%. La frecuencia de Salmonella en las principales carnes que se comercializan en los mercados de Huánuco fue de 5%.
