In the first case, Italian Molise’s experiences are analyzed, in the second case from North Argentine Patagonia. It investigates the footprints of passing cattle, searching the double recognition made by institutions and populations. It seeks to understand the strands that link the meanings of practices, addressing the socio-environmental challenges of territories between marginal and essentialized, which refer to structural aspects, customs and specific practices. The cases are compared by understanding them within the Anthropocene. To make visible their crossing tensions, it appeals to the Capitalocene critical theories, which associate sustainable development, dissemination and education with a new discourse on global heritage. From here, and in the light of experiences, relationships between intangible cultural heritage and sustainable development around livestock farming are made explicit, based on the shared difficulties in recognizing the activity outside of an essentializing perspective.Este trabajo propone revisar los desafíos actuales del pastoreo extensivo y trashumante, a partir de comparar procesos europeos y americanos. En el primer caso se toman experiencias de la región de Molise en Italia, en el segundo de la Norpatagonia argentina. Se indaga en las huellas del ganado que pasa, en el doble reconocimiento hecho desde instituciones y de poblaciones. Buscamos comprender las hebras que ligan los sentidos de las prácticas, atendiendo a los desafíos socioambientales de territorios entre marginales y esencializados, que remiten a aspectos estructurales, de costumbres y prácticas concretas. Los casos se comparan a partir de entenderlos dentro del Antropoceno. Para visibilizar las tensiones que los atraviesan, se apela a las teorías críticas del Capitaloceno, que asocian el desarrollo sostenible, la difusión y la educación a un nuevo discurso sobre el patrimonio global.
