Se describe la metodología utilizada para separar, identificar y cuantificar Sucralosa en un edulcorante comercial conocido como Sucaryl, por CPAE, optimización del sistema de revelado y relación entre los solventes de la fase móvil, distribución de luminaria y mejora del montaje para captura de imágenes, edición de imágenes capturadas y obtención de perfiles cromatográficos con el uso de un ImageJ para realizar la cuantificación del analito en muestras reales. La metodología se fundamenta en la preparación de placas cromatográficas con soluciones patrón y muestras sembradas sobre ella, su posterior revelado, digitalización y posterior análisis para su cuantificación utilizando un programa de computador conocido como ImageJ. El procedimiento de cromatografía en plano se comparó con el método tradicional de cromatografía vertical, presentado buena linealidad en cuantificación de la Sucralosa contenida en productos comerciales.
