Se sabe que fue uno de los ingredientes predominantes en la alimentación prehispánica y que también tuvo importancia ritual como ofrenda o la supresión temporal de su consumo dentro de algunos ritos. De esta manera, se creó un conjunto de representaciones, creencias y prácticas asociadas al consumo del ají y que fueron compartidas por los individuos de las culturas prehispánicas en los Andes.
