the recipe: much more than a process in the kitchen

This essay is a different view of an underlying studies on cooking and food theme, and the social science community does not feel the need to consider , evaluate and analyze this issue , much less a culinary recipes , from a thoughtful and scientific gaze , which contributes to the knowledge of the culinary roots, its historical development partner , the process of production of identities of some groups in the country, even to transit routes dynamism of modernity of the new century . No doubt today ‘s recipe is one of the main gastronomic products expected by farmers, chefs , scholars, housewives or public, is given by this corollary obvious and therefore , the author takes a direct reflection from the social sciences, and invites with healthy challenge for social scientists take care of what they can learn , study, interpret and explain , in the current context of the so called ‘ Peruvian gastronomic boom’.
El presente ensayo es una mirada diferente sobre un tema subyacente a los estudios sobre cocina y gastronomía, y es que la comunidad de ciencias sociales todavía no siente la necesidad de considerar, valorar y analizar dicho tema, mucho menos a las recetas culinarias, desde una mirada reflexiva y científica, que coadyuve al conocimiento de las raíces culinarias, su evolución sociohistórica, el proceso de producción de identidades de algunos grupos sociales del país, incluso su dinamismo para transitar rutas de la modernidad del nuevo siglo. Sin duda, hoy en día, la receta es uno de los principales productos esperados por los cultores gastronómicos, chefs, especialistas, amas de casa o público en general, se da por obvio este corolario y, por ello, la autora hace una particular reflexión desde las ciencias sociales, e invita con sana provocación para que los científicos sociales tomen atención de lo que pueden conocer, estudiar, interpretar y explicar en el contexto actual del llamado ‘boom gastronómico peruano’.
