This article shows the benefits that a restaurant which uses Information Technologies (IT) as a strategic tool for management would get. The restaurant where the study was carried out, has a model for operations management, whose indicators use variables in terms of profitability and resource utilization in an independent manner, not related; the disadvantage is the inability to measure the profitability in terms of resource utilization. For this reason, a mixed indicator was used: REVPASH (revenue per available seat hour), which made it possible to measure the profitability of the restaurant in terms of the use of its resources. El trabajo de investigación a realizar toma como punto de partida una tendencia en la gestión de diversas industrias de servicios a nivel mundial denominada Revenue Management. La cual fue analizada dentro del mercado peruano, teniendo como resultado el poco conocimiento de los profesionales en su aplicación. Anteriormente se tomaron en consideración tres industrias (Restaurantes, Hoteles y Data Centers), en las cuales se visitaron diversos centros y se indagó sobre el tema. En paralelo, se investigó la oferta y demanda que tienen los sistemas de información que incorporan la aplicación del Revenue Management en su lógica, encontrando que dichos softwares, son poco accesibles y sumando el desconocimiento de los tomadores de decisiones, su utilización es casi nula.
