This project pretend to demonstrate the commercial, technical, financial, economic and social viability of the installation of a plant that produces Isolated and Hydrolyzed Kañiwa – based Portein. Kañiwa is a Peruvian Andean grain, similar to quinoa, but with a higher percentage of proteins (18 – 20%), resistant to saponins and an amino acid profile that can be compared with casein or milk protein (Repo-Carrasco, 2003). A demand for 30,770 packs of 1kg for the last year of the project (selected to be the plant size) was estimated at a sales value of 136.5 soles/unit that will be distributed to specialized stores such as LabNutrition, Flora&fauna, Thika Tani, etc, places that our target audience frequents.
