La calidad en taza del café depende de los atributos sensoriales que posee el grano molido tostado además de la zona agrícola que procede y por la cantidad de cafeína existente. Así, el objetivo de esta investigación fue evaluar el efecto de los niveles altitudinales sobre el contenido de cafeína en café tostado molido entre las variedades Catimor, Caturra y Pache en la Región San Martín además de determinar la relación del contenido de cafeína sobre la calidad sensorial del café en taza. La muestra del estudio estuvo conformada por 14 empresas a las cuales se les aplicó un cuestionario sobre cadena de valor adaptado de Michael Porter con 173 preguntas, donde el 72% corresponden a preguntas cerradas y 28% a preguntas abiertas, esto con la finalidad de obtener información sobre las actividades primarias y secundarias de la cadena de valor y luego de una ponderación y contrastación se obtuvieron las ventajas competitivas en liderazgo en costos y diferenciación.
