Elabora una propuesta de gestión de la inocuidad alimentaria para la MYPES del subsector restaurantes de Lima Metropolitana, que les permita asegurar la inocuidad en la producción de sus productos, no generar ningún daño al consumidor final, y aumentar su competitividad en el mercado a través del acceso a nuevas demandas de mayor tamaño. Para ello, el trabajo de investigación se dividirá en 3 capítulos.
