Objective: To compare the nutritional status of new students of human medicine career at a Peruvian public university, before and during the COVID-19 pandemic. Material and methods: Observational, analytical, and cross-sectional study, carried out on 84 new students of the human medicine career at the Universidad Nacional Jorge Basadre Grohmann of Tacna, during 2019-2020 (before the pandemic) and 2021 (during the pandemic). Health tests (BMI, hemoglobin, glucose, cholesterol) taken on an empty stomach at the start of the race were reviewed, and an anonymous and virtual questionnaire was also applied, prior informed consent with socioeconomic information, sedentary lifestyle, and academic preparation. This is a newborn in the department of San Martín, who presented gastroschisis and was treated immediately with hydration, parenteral nutrition, decompression of the hollow viscera with aspiration and surgical technique, using a blood bag as a protector to then proceed to the continuous taxia and the daily washes; with good evolution and total suture on the seventh day after the operation.

The nervous control of salivary secretion is exclusive to the autonomic nervous system, which has a sympathetic part, which originates from the thoracic segments; and a parasympathetic, which occurs through nerve signals from the salivary nuclei. Nerve control begins with gustatory stimuli, which are mediated by NCV3 (third branch of the trigeminal nerve), NC VII (facial nerve), and NCIX (glosopharyngeal nerve). In addition, the pathway that follows the stimulation for salivary secretion is: preganglionary fibers, ganglion, and fibers postanglionary parasympathetic fibers. Saliva is composed of 95 to 99 % water and the remaining percentage corresponds to solids that are subdivided into organic, where protein compounds such as enzymes and immunoglobulins are found; non-protein such as urea and inorganic compounds that behave as electrolytes.
