El trabajo de investigación tuvo como objetivo evaluar la viabilidad del Lactobacillus casei ATCC 393 microencapsulado con jugo de yacón (Smallanthus sonchifolius) por el método de secado por aspersión, analizando la influencia del porcentaje de encapsulante (caseinato de sodio a 7,5% y 10%) y la temperatura del secado (100°C, 120°C y 140°C) en la eficiencia del microencapsulado, el porcentaje de supervivencia después de 30 días de almacenamiento y luego de sometido a diferentes pH de jugo gástrico simulado (JGS: pH 1,0; 1,5; 2,0) medido a las dos horas y el jugo intestinal simulado (JIS: pH 7 y 8) medido a dos y cuatro horas, los mismos que fueron determinados por cultivo en Agar MRS a 37°C, asimismo, se determinó el contenido de fructanos tipo inulina fructooligosacáridos de acuerdo con la metodología oficial para la determinación de inulina y FOS (999.03). However, the lack of specific measurement instruments for specific regional contexts may limit the ability of companies to evaluate and improve their sustainability performance. The main purpose of this evaluation is to analyze the economic viability of the implementation of circular models in agriculture in Tarma, Peru. This involves examining the costs and benefits associated with the adoption of circular practices, as well as identifying possible barriers and opportunities for their implementation at the local level. By better understanding the economic landscape, it will be possible to inform decision-making both at the government level and at the level of individual farmers. For the analysis, we have a committee of 30 experts who will evaluate the relationship between variables that positively or negatively affect the implementation of these models in the town.
