A solar thermal accumulator is designed and built using the phase change principle, to optimize the drying process in a familiar solar dryer, in an additional period to the cessation of the incidence of solar radiation; the phase change material selected is the commercial paraffin, whose thermal properties have been characterized by the KD2 Pro meter. The melting temperature of the paraffin (53 oC) is around the operating temperature of the medium temperature solar dryer. The solar thermal accumulator is characterized by being modular, consisting of twelve cylindrical units of recycled aluminum, where each unit contains 200 g of paraffin and incorporates meshes with aluminum fins to improve the flow of heat to the outside and optimize its transfer to the air. En el presente trabajo se determina la influencia del acumulador solar térmico de cambio de fase y calor sensible en el funcionamiento de sistemas solares familiares como la cocina y secador solar. Para ello, se caracteriza las propiedades térmicas de la parafina como un material local de cambio de fase. La estructura del acumulador parte del concepto de ser modular de placa compacta, cuyas dimensiones se determinan mediante la simulación térmica en Comsol Multiphysics. Para mejorar la transferencia de calor desde el material de cambio de fase, se incorpora aletas internas y/o externas en el acumulador para acelerar el proceso de carga y descarga de la energía térmica. The intake of dehydrated fruits helps to reduce digestive problems, promotes intestinal transit, improves the gastrointestinal system and prevents throat problems, among other benefits. In this work, using a multipurpose solar module (MSM), which was designed and built by the research team of the Center for Renewable Energies of the National University of San Cristóbal de Huamanga (UNSCH), dehydrated apples, pineapples and bananas, constituting a product to commercialize, which we call SNACK SOLAR. The physical-chemical evaluation of these dehydrated fruits shows that the concentration of ascorbic acid (vitamin C) was greatly improved, thus in 100 g of affected apple from 0.833 mg to 13.33 mg, in 100 g of affected pineapple from 27.5 mg to 39.33 mg and in 100 g of bananas increased from 13.83 mg to 39.33 mg, which represents a significant contribution to human food, even more, using the...
