In the development of new food products evaluating sensory quality is critical. In some countries of America, the Caribbean and Peru, to control sensory food quality procedures known as the Analytical Procedures for the Sensory Evaluation (PAES) (Zamora, 2007) are used. En el desarrollo de nuevos productos alimenticios la evaluación de la calidad sensorial es fundamental. En determinados países de América, el Caribe y en el Perú, para el control de la calidad sensorial de los alimentos se utilizan procedimientos conocidas como los Procedimientos Analíticos para la Evaluación Sensorial (PAES) (Zamora, 2007).Torricella y Huerta (2008), desarrollaron una metodología denominada: Procedimiento de Análisis Sensorial (PAS) a partir de los PAES anteriormente mencionado, el cual es más simple y no emplea factores de conversión, pues la menor puntuación define la calidad sensorial final del producto que se evalúa.
