The objective of this work is to determine the social, technical, ambiental and economic feasibility of the installation of a processing plant for ready-to-fry dressing, vacuum packed and sachet over a 6-year shelf life. The product is made of on three raw materials: Onion, garlic, and chili. It will have a presentation of 250 grams per package (200 grams of onion, 12,5 grams of garlic and 37,5 grams of chili), which will be distributed in the supermarkets of Lima Metropolitana to cover the demand of socioeconomic levels A and B. After having projected the number of households and conducted a market study based on surveys, the demand for the last year of the project was estimated at 230,288 kg of finished product per year.
