Se realizó una investigación de tipo descriptiva en algunos tipos de preparaciones culinarias que se incluyen en los desayunos comercializados en la vía pública de la Urbanización Maranga, ubicada en el distrito de San Miguel en Lima, Perú. El objetivo fue evaluar el aporte nutricional de las seis preparaciones más consumidas que forman parte de estos desayunos. Se estimó el aporte nutricional de energía, proteínas, grasa total, grasa saturada, carbohidratos totales, azúcares añadidos, fibra dietaria, calcio, hierro, vitamina A y vitamina C. Los resultados por porción obtenidos de las preparaciones de mayor demanda por los consumidores fueron los siguientes en la bebida de quinua: energía 118.9 kcal, proteína 1.2 g, grasa total 0.5 g, carbohidratos totales 29.4 g, calcio 16.6 mg , hierro 1.3 mg, vitamina A 3.6 µg, vitamina C 4 mg, azúcar añadido 17.7 g, grasa saturada 0...
