Introduction: vegetarianism is in a historical moment of expansion, proposing other ways of eating and a new type of gastronomy on the rise that require technical monitoring to evaluate its nutritional impact. Objective: to characterize the structure and qualitatively evaluate the quality of the vegetarian diet of Venezuelan adults. Material and methods: the consumption of 224 people (vegans n = 29, vegetarians n = 74, flexitarians n = 121) was evaluated using the combined technique of R24H and QFFC, in order to qualitatively compare their dietary pattern with the food guide official for the Venezuelan population. Results: only the group of vegetarians managed to adequately adjust to the guide in terms of the harmony and proportionality necessary to achieve a balanced diet. Introduction: for Venezuela, which is going through a profound political and socioeconomic situation, it is imperative to know the nutritional situation of the child population, in order to intervene on its possible consequences. Methods: to diagnose their anthropometric-nutritional situation, body weight, height and arm circumference were measured in 1717 infants from eight neighborhoods in the city of Puerto La Cruz, constructing the P/E, T/E, P/T and CBM indicators, using the WHO standards. Results: although most were within normal limits, a significant incidence of stunting (chronic malnutrition) followed by emaciation (acute malnutrition) was obtained, while overweight has practically disappeared. Recently, artisanal masses of pilar corn have become a food for mass consumption in Venezuela, without adequate sanitary control in terms of production and sale. There are very few internationally referenced studies and none recently locally, regarding this product; for this reason, the objective of this research has focused on its microbiological evaluation with samples obtained in the municipal market of Puerto La Cruz, which are the main point of sale of the same in the main Venezuelan cities. The frequencies of total coliforms, fecal coliforms, presence of Escherichia coli, aerobic mesophiles and Staphylococcus aureus were determined as indicators of inadequate manipulation; The presence of molds and yeasts was also considered as microorganisms associated with cereals.
