La extracción de fitoesteroles de tarwi en el país no está ampliamente estudiado en cuanto al rendimiento de extracción y pureza, con métodos extractivos no convencionales y tecnologías limpias, en tal sentido, el estudio tuvo como objetivo evaluar el efecto de la temperatura y presión en el contenido de fitoesteroles de aceite de tarwi variedad Andenes extraído por CO2 – Supercrítico.
