The paper analyses the events leading to the 2006 uprising of theAchuar people of the Corrientes basin (Loreto), who have sufferedfour decades of contamination due to oil exploitation. It also examinesthe Peruvian State’s and the oil company´s attitudes throughoutthe protest and after signing an agreement aiming to stop contaminationand remedy environmental and social havoc. Materials usedinclude interviews conducted with different stake holders and a widerange of written records, such as political declarations, reports onlocal people´s health´s and remediation work, agreement documentsand letters exchanged between stake holders, as well as historicaland socio economic background information. This article deals with the social and economic processes that led to creating an institution known as “native community”, formally in 1974 through a specific law. Furthermore, we deal here with the attempts by various administrations to undermine it. We also explain the criteria underpinning traditional indigenous governance and the important role of communities, organized as second level organizations, have played in specific contexts (demands claiming rights’ violations, legal and political proposals, the country’s pacification and ways of dealing with Covid-19). Finally, the article examines the emergence of a new subject of rights, namely “indigenous people”, who are also the bearers of other rights such as the right to an integrated territory and autonomous governance-that are still in the making.

El Perú es uno de los doce países megadiversos del mundo, hecho que está relacionado con una realidad cultural pasada y presente igualmente diversa. No es, pues, casual que sobre este espacio territorial y el de la actual Bolivia hayan florecido las principales civilizaciones de esta parte del continente. Hoy se repite de manera insistente que el Perú no es un país agropecuario, como una forma de reforzar la importancia que se le quiere atribuir a la minería como la actividad generadora de riqueza. Esta verdad es sólo a medias cuando se compara al Perú con los grandes productores de cereales del mundo, sin tener en cuenta la importancia de los cultivos y animales domesticados que ha aportado al mundo.Es en este contexto de diversidad biológica y cultural que debe verse la riqueza culinaria del país.
