Este estudio tuvo como objetivo evaluar el efecto del ultrasonido en la inactivación enzimática de polifenol oxidasa y peroxidasa y las propiedades fisicoquímicas (pH, color, acidez y brix) en rodajas de manzana (Red delicious). Las rodajas de manzana se sometieron a un baño ultrasónico con diferentes parámetros: frecuencia (28 y 40 kHz), tiempos (5 y 10 min) y temperatura (30 y 40 °C). Se evaluaron los resultados mediante un análisis de varianza a un 95% de confianza (SPSS y Minitab) donde las condiciones de operación tuvieron un efecto significativo sobre las variables estudiadas. En la inactivación enzimática de PPO (polifenol oxidasa) el factor frecuencia, temperatura y tiempo fueron significativos, siendo el mejor tratamiento (28 kHz, 40 °C, 10 min), se logró una reducción de la actividad enzimática de 59.25%. The following work has the aim to develop and present the vicissitudes that patients diagnosed with a life-threatening disease, which makes them face the possibility of death, experience. Special mention and emphasis will be made on the contributions that can made from Palliative Care and, especially from our discipline, Psychology. Throughout this text, we will analyze the concept of time and how this time could determine or limit what we understand in palliative care as "dying well". To understand these concepts, we use the bibliographic review as a work methodology, we search for authors from various disciplines, who suggest thinking about dying well, the subjective and chronological time. The review consists of an approach to the concepts, ideas, theories that motivate us to raise some questions regarding our practice, and thus, produce this writing.
