Sumario:This project pretend to demonstrate the commercial, technical, financial, economic and social viability of the installation of a plant that produces Isolated and Hydrolyzed Kañiwa – based Portein. Kañiwa is a Peruvian Andean grain, similar to quinoa, but with a higher percentage of proteins (18 – 20%), resistant to saponins and an amino acid profile that can be compared with casein or milk protein (Repo-Carrasco, 2003). A demand for 30,770 packs of 1kg for the last year of the project (selected to be the plant size) was estimated at a sales value of 136.5 soles/unit that will be distributed to specialized stores such as LabNutrition, Flora&fauna, Thika Tani, etc, places that our target audience frequents. After an analysis of macro and microlocation through a ranking of factors we concluded that the best location for the plant would be in Lima, Huachipa district. We obtained a market-limited plant size with 30,770 packs of 1kg and a equilibrium point of 3,803 packs of 1Kg. There is also an entire chapter dedicated to the project engineering, it shows the technical specifications of the product, the safeguarding of quality, production process, machine relationship, environmental impact, occupational safety and health, inventories and plant distribution design. The project was evaluated for five years (COK = 20.95%) economically and financially obtaining an economic and financial VAN of S/. 1’293,099 and S/. 1’428,342 respectively with a recovery period up to three years and a C/B greater than 1. Finally, we got an Added Value from S/. 6’995,198 that reflect the potential social benefits with which the implementation of this project can be contributed.
