The results showed that these varieties have the potential to meet industrial standards, especially under HTST treatment, with the Real Sicaina variety achieving comparable quality levels to imported varieties. This work promotes the development of the Peruvian agroindustry, providing a foundation for future research on optimized processes and new potato-based products. |

Estas variedades se compararon con las variedades importadas bajo los tratamientos de blanqueamiento y prefritura, destacando la falta de investigaciones previas sobre las variedades locales. El principal desafío radica en la brecha tecnológica en Perú, donde no se producen papas prefritas congeladas debido a la calidad de la materia prima y los procesos limitados. Esta investigación probó nuevas variedades y analizó el impacto de los tratamientos en indicadores clave como el color y la humedad. Los resultados mostraron que estas variedades tienen el potencial de cumplir con los estándares industriales, especialmente bajo el tratamiento HTST, y la variedad Real Sicaina logra niveles de calidad comparables a los de las variedades importadas.
