The results were evaluated after the completion of the process, and it was found that the application of SMED led to a significant reduction in downtime. The product changeover time was decreased from 82 minutes to 42 minutes, reducing plant downtime or waste by 40 minutes and improving lean manufacturing indicators.Esta investigación se realizó en una empresa de productos farináceos que presentaba un problema de baja productividad debido a las constantes paradas de planta, por lo que no operaba a toda su capacidad. Para abordar este problema, se consideró necesario aplicar las herramientas «mapeo de la cadena de valor» (VSM) y «cambios rápidos» (SMED) de la metodología lean manufacturing o manufactura esbelta. La aplicación de estas herramientas se realizó por etapas, que incluyeron un pretest de diagnóstico (mapa actual), seguido por el diseño, implementación y, finalmente, un postest (mapa final).
