Analysis of four factors were presented.En el presente trabajo se investigaron las condiciones óptimas de extracción de antocianinas de las corontas del maíz morado mediante el empleo de un diseño completo al azar con arreglo factorial 2A3B4C4D. Los factores estudiados fueron pH, solvente, tiempo y temperatura. Los resultados mostraron antocianinas entre 8,404 y 47,984 mg/g de coronta, determinados según el método de pH diferencial.
