Experimental studies show that aflatoxins are carcinogenic. This paper proposes a plan of actions to prevent, control and desinfecting products contaminated with aflatoxins. Post harvest treatment of the product involves drying and storage temperature of 5 °C and relative humidity below 80%. The technique of ozone gas to disinfect contaminated products represents the best alternative because does not generate waste, the product is not damaged and the ozone gas is safe.Las aflatoxinas son un grupo de sustancias altamente tóxicas producidas por ciertas especies de Aspergillus, especialmente A. flavus, que contaminan productos agrícolas tales como granos de maíz, maní, semilla de algodón, alimentos para animales, entre otros. Estudios experimentales muestran que las aflatoxinas son cancerígenas. En este trabajo se propone un esquema general de acciones para evitar, controlar y desinfectar productos contaminados con aflatoxinas. El tratamiento pos cosecha del producto implica procesos de secado y almacenamiento a temperatura de 5 °C y humedad relativa por debajo de 80%.
