Different types of cheese were evaluated: ground, processed, parmesan, Swiss and cut cheese. It was concluded that of 40 samples, 30% had Staphylococcus aureus confirmed with the coagulase test and 35% had Staphylococcus epidermidis, 20% of samples in ground cheese had Staphylococcus aureus and 5% in processed and Swiss cheeses. Likewise, 25% of Staphylococcus epidermidis was found in ground cheese and 5% in parmesan and cut cheeses. It can be concluded that the cheeses sold in the city of Bagua present poor handling and poor hygienic conditions in the production and in the sellers, being a risk to the health of the population.El objetivo de este trabajo fue aislar Staphylococcus aureus de quesos comercializados en el mercado central de la ciudad de Bagua, este estudio de tipo descriptivo y no experimental fue realizado en el “Laboratorio de ciencias Naturales” de la Universidad Nacional Intercultural Fabiola Salazar Leguía de Bagua; se recolectaron 40 muestras de quesos, necesitándose 100 g. que fueron sembrados en Agar Manitol Salado y se confirmó con la prueba de coagulasa. Se evaluaron diferentes tipos de como: queso molido, fundido, parmesano, suizo y de cortes. Se terminó que de 40 muestras el 30% presentaban Staphylococcus aureus confirmado con la prueba de coagulasa y el 35% Staphylococcus epidermidis, el 20% de muestras en queso molido presentaron Staphylococcus aureus y el 5% en quesos fundido y suizo. Así mismo se encontró el 25% de Staphylococcus epidermidis en queso molido y el 5% en quesos parmesano y de corte.
