The relationship between local technological innovation and industrialization in a country like Mexico, where both processes do not usually go hand in hand, highlighted.Descripción del desarrollo de la industria del nixtamal, que comprende la molienda de maíz nixtamalizado, la elaboración mecanizada de tortillas y la producción de harina de maíz nixtamalizado. Al basarse en la innovación local, se ajustó a las preferencias de los consumidores nacionales, que consumen tortilla recién hecha. Sin embargo, con el tiempo y la expansión global surgieron nuevos tipos de productos, como la tortilla empacada producida en gran escala que fue conquistando el mercado nacional.
