In current urbanized societies the elevated oral intake of sodium has been linked to an increase in the prevalence of arterial hypertension and of the cardiovascular and cerebrovascular mortality. Recent investigations have also demonstrated sodium harmful effect over vital organs, independent of its action over blood pressure. In parallel, an increase in the oral potassium intake has shown an antihypertensive effect as well as antiinflammatory, anti-fibrotic and anti-oxidant effects. New physiological findings, along with epidemiological studies about the role of potassium in control of blood pressure, have stimulated the formulation of health policies towards a nutrition with less sodium and more potassium.Durante un corto período evolutivo de la especie humana, se ha observado un marcado incremento en el consumo dietario de sodio y una disminución en la ingesta de potasio. En sociedades urbanizadas actuales, el progresivo incremento en la ingesta de sodio y la disminución de la ingesta de potasio se ha asociado a un incremento en la prevalencia de hipertensión arterial, y consecuentemente al incremento de mortalidad debido a enfermedades cardiovasculares y accidentes cerebrovasculares. Investigaciones recientes han demostrado el efecto nocivo del sodio sobre órganos vitales independientes de su efecto sobre la presión arterial. Paralelamente, se ha observado que un incremento en la ingesta de potasio, tiene un significativo efecto antihipertensivo, además de efectos antiinflamatorio, antifibrótico y antioxidante.
