Given the rapid spread of the emerging pandemic Covid-19, it continues to be of great concern due to the mortality that occurs globally and there is no doubt about the level of stress in the population. Attempts to fl atten the epidemiological curve are diverse in that Covid-19 could not only aff ect psycho-mentally, but some non-communicable diseases may perhaps debut. Considering the serious situation, from the axiological point of view, a question arises: can the daily consumption of fruits and vegetables in the diet patterns generate, from the metabolic point of view, any potentiating impact on immunology against COVID-19?Los polifenoles son compuestos del metabolismo secundario en las plantas donde se reconoce su acción en el control contra radicales libres y especies reactivas de oxígeno. El objetivo del estudio fue indicar a los polifenoles y su ingesta en frutas y verduras como acción protectora para la salud humana por estrés ante el Covid-19. Dada la rápida propagación de la pandemia emergente Covid-19, continúa siendo de gran preocupación por la mortalidad que se produce a nivel global y no existe duda sobre el nivel de estrés en la población. Los intentos por aplanar la curva epidemiológica son diversos por cuanto, el Covid-19 no solo podría afectar psico-mentalmente sino, algunas enfermedades no trasmisibles, quizás puedan debutar.
