The evaluation revealed that there was not a significant difference between constant and variable temperatures of fermentation concerning to the weight, that is to say concerning to the yield in biomass, although there was a difference respect to grains of kéfir consistency. The results demonstrated that the grains of kéfir obtained at variable temperature of fermenta non, it means at ambient temperature between 19 and 26 ºC, they turned out to have bigger consistency than grains fermented at constant temperature of 24 ºc. Finally, this study demonstrated that at least in our country, Peru, in places where c1imates do not present extreme temperatures, the fermentation of grains of kéfir with the purpose of producing Kefir and biomass at ambient temperature, is viable and of great importance, since it can be carried out without spending additional energy in the process.En este estudio comparativo se evaluó el efecto de la temperatura en la fermentación y producción de biomasa proveniente de la microbiota del grano de kéfir utilizando leche entera como sustrato. Se empleó inóculo a una concentración de 5% y se dejó fermentar por 4 ciclos de fermentación a razón de 24 horas por ciclo, para posteriormente evaluar los resultados de fermentación a las dos temperaturas dadas: constante a 24ºC y variable entre 19 y 26 ºc. La evaluación reveló que no había diferencia significativa entre las temperaturas de fermentación constante y variable respecto al peso, es decir respecto al rendimiento en biomasa, aunque sí se observó diferencias con respecto a la consistencia de los granos de kéfir. Los resultados demostraron que los granos de kéfir obtenidos a temperatura variable de fermentación, es decir a temperatura ambiente entre 19 y 26 ºC, resultó tener mayor consistencia que los granos fermentados a temperatura constante de 24 ºc.
