Summary:The objective of this review was to know the applications of sensory evaluation in the determination of the shelf-life of cheeses, the importance of these analyses as well as sensory test methodologies, judges responsible for sensory evaluation, and statistical techniques for analysing the results of the evaluation, by collecting information concerning recent research on the determination of the shelf-life of cheeses using sensory evaluation, since in these studies different methods of sensory analysis are used, the choice of judges, , type of judge, and statistical methods of analysis of the data are different but each one of them comes to the same end that is the determination of the shelf-life of cheeses by means of the sensory tests. The different researches are made to different types of cheeses from fresh cheeses to matured with different denominations and different attributes that characterize them
